Cabernet-led red wines dominate production, but producers are increasingly exploring regional identity, mountain viticulture, local grape material and more precise white, sparkling and sweet wine styles.

The story
Wine History
Grapes and fermented grape beverages have existed in China for thousands of years, with documented exchanges along ancient Central Asian trade routes. Modern commercial winemaking is generally traced to the establishment of Changyu in Yantai in 1892. Production expanded during the twentieth century and accelerated after China’s economic reforms. From the 1990s, international grape varieties, foreign expertise and large-scale investment reshaped the industry. More recently, regional projects and boutique estates have focused on vineyard origin, lower yields and premium wine.

The landscape
Geography & Wine Regions
China’s wine regions are separated by enormous distances and contrasting landscapes. Northwestern vineyards occupy arid basins, desert margins and mountain foothills where irrigation is essential. Eastern regions experience stronger maritime influence and summer rainfall. Southwestern vineyards can sit at extreme elevations within steep river valleys, while northeastern sites experience severe winters. Soils include gravel, sand, loess, alluvium, granite-derived material and mountain deposits.
Ningxia
The eastern foothills of the Helan Mountains form China’s most internationally recognised premium wine region, known particularly for structured red blends.
Shandong
A major eastern wine-producing province centred around Yantai and Penglai, where maritime influence moderates summer temperatures.
Xinjiang
A vast northwestern region of dry basins, desert margins and mountain influence producing ripe reds, whites and sweet wines.
Hebei
An established northern wine region surrounding Beijing and including areas such as Changli and Huailai.
Yunnan
High-altitude vineyards in the Himalayan foothills and upper Mekong valleys produce distinctive wines under intense sunlight and cool nights.
Shanxi
Elevated vineyards around the Taiyuan Basin and Loess Plateau support increasingly refined Cabernet-led wines.
Gansu
An arid northwestern region associated with the Hexi Corridor, long sunshine hours and irrigated desert-edge vineyards.
Northeastern China
Cold regions including Liaoning and Jilin are particularly associated with hardy grapes and specialised ice-wine production.

Growing conditions
Climate & Viticulture
China cannot be described by one wine-growing climate. Ningxia, Xinjiang and Gansu are dry and strongly continental, with abundant sunshine but extremely cold winters. Shandong is more humid and maritime, creating greater disease pressure during the growing season. Yunnan combines high elevation, intense ultraviolet light and pronounced day-to-night temperature differences. In many northern regions, vines must be buried during winter to protect them from severe cold.

Native varieties
Longyan
A historic Chinese white grape used for fresh wine, sparkling wine and table-grape production, particularly in northern regions.
Beichun
A locally developed cold-resistant red hybrid valued for its ability to survive demanding northern growing conditions.
Shuangyou
A cold-hardy grape associated with northeastern China and used for deeply coloured regional wines.
Shuanghong
A locally cultivated, winter-resistant red grape used in northeastern wine production.
International varieties
Cabernet Sauvignon
China’s most important premium red variety, producing structured varietal wines and Bordeaux-style blends across several regions.
Cabernet Gernischt
A long-established Chinese planting associated genetically with Carménère and valued for dark fruit, herbs and spice.
Marselan
A Cabernet Sauvignon and Grenache crossing that has developed a strong following for its colour, perfume and adaptable structure.
Merlot
Commonly blended with Cabernet Sauvignon, bringing plum fruit, softness and earlier accessibility.
Chardonnay
Used for still and sparkling wines, particularly in cooler, coastal and high-altitude vineyards.
Riesling
Found in cooler northern and elevated locations, producing dry aromatic wines with bright acidity.
Syrah
Increasingly planted in warm, dry and high-altitude regions where it develops dark fruit and peppery character.
Pinot Noir
Used in selected cool-climate sites and for both still and sparkling wine production.

Principal Wine Styles
Chinese wine is best known for Cabernet-led reds, but its regional range is expanding. Dry western vineyards favour concentrated red wines, coastal regions support fresher styles, northeastern areas specialise in ice wine and high-altitude Yunnan produces wines with a distinctive balance of ripeness and freshness.
Cabernet-Led Red Wines
Cabernet Sauvignon, Merlot and Cabernet Gernischt produce structured reds with dark fruit, herbs, spice and oak influence.
Marselan Wines
An increasingly important Chinese style, combining deep colour, floral aromatics, ripe fruit and relatively polished tannins.
High-Altitude Reds
Yunnan’s mountain vineyards produce concentrated but fresh red wines shaped by elevation, intense sunlight and cool nights.
Dry White Wines
Chardonnay, Riesling and other white grapes create styles ranging from crisp and unoaked to textured and barrel matured.
Ice Wine
Cold northeastern regions produce naturally sweet wines from grapes frozen on the vine, including protected Huanren ice wine.
Sparkling Wine
A developing category produced from Chardonnay, Pinot Noir and other grapes in selected cooler and elevated vineyards.

Understanding the label
Wine Classification
China does not currently use one nationwide appellation hierarchy equivalent to the European PDO system. Wine production is governed through national product, labelling and food-safety standards, while geographical indications protect recognised regional names. Some regions have also introduced their own systems, regulations and producer assessments. Regional origin, producer reputation and vineyard information therefore remain particularly important when evaluating Chinese wine.

Food & Wine Culture
Wine occupies a relatively modern place alongside China’s much older traditions of grain-based alcohol, tea and regional banqueting. Contemporary Chinese wine is increasingly served with local cuisine rather than only with Western dishes. Cabernet-led reds suit roasted and braised meats, aromatic whites work with seafood and lighter dishes, while off-dry or sweet wines can complement spice, rich sauces and desserts.

China’s wines are defined by scale, climatic extremes and rapid regional development. Desert-edge vineyards, coastal estates and Himalayan sites create markedly different expressions, while Cabernet Sauvignon, Cabernet Gernischt and Marselan provide a recognisable modern foundation. The most compelling wines increasingly focus on vineyard origin, altitude and a distinctly Chinese interpretation of international grape varieties.
