A Sweet Cava That Actually Works

Alegría de Tharsys Dulce Inicial surprised me at ProWine Singapore 2026

Sweet sparkling wines are usually difficult.

Too often they become:

  • heavy,
  • cloying,
  • one-dimensional,
  • interesting for a sip but exhausting for a glass.

Then I tasted Alegría de Tharsys Dulce Inicial at ProWine Singapore 2026.

And suddenly the category made sense again.

This wasn’t trying to imitate Champagne.
It wasn’t pretending to be Brut Nature.
It understood exactly what it wanted to be:
a joyful, expressive sparkling wine built around balance instead of austerity.

The wine is made from Chardonnay and aged for over 14 months on lees using the traditional method. Dosage sits around 50 g/L, but what stood out immediately was the acidity.

The sweetness never collapsed under its own weight.

Instead, the wine showed:

  • tropical fruit,
  • apricot,
  • peach,
  • creamy mousse,
  • and a freshness that kept pulling you back for another sip.

At the fair, this became one of those wines people kept returning to.

Not because it was intellectual.

Because it was enjoyable.

And honestly, there is real value in wines that understand pleasure without becoming simplistic.


Why This Wine Matters

In Southeast Asia, many consumers still prefer:

  • softer acidity,
  • approachable fruit,
  • celebratory styles,
  • wines that feel generous rather than severe.

This cava fits that space beautifully.

I immediately started thinking about:

  • Indian weddings,
  • brunch programs,
  • hotel pours,
  • festive gifting,
  • spicy food pairings,
  • even welcome drinks for events.

The balance makes it commercially interesting.

At €6.80 EXW, it was one of the strongest value sparkling wines I tasted during the fair.


The Technical Detail I Appreciated

The dosage is created from a secret blend of older sweet wines from the winery.

That matters because the sweetness feels integrated rather than simply added.

Fine bubbles.
Creamy texture.
Fresh finish.

This is not a novelty sparkling wine.

It is a carefully engineered one.


Would This Work in Singapore?

Very likely.

Especially in places where Brut Nature styles can feel too aggressive for casual drinkers.

This wine understands:

  • hospitality,
  • celebrations,
  • and approachability.

And sometimes that is exactly what sparkling wine should do.

Sweetness is easy. Balance is difficult.
