Why This Wine Matters
Catherine Cuvée Exceptionnelle represents Ghost Rock's flagship sparkling wine. Produced using the Méthode Traditionnelle (Champagne Method), only the gentlest press fraction of Chardonnay and Pinot Noir is selected for this cuvée. After primary fermentation, the wine undergoes malolactic fermentation, spends ten months ageing on lees in tank before secondary bottle fermentation, and then matures for at least 30 months on lees before disgorgement. The result is a sparkling wine of outstanding finesse that rivals many premium Champagnes while expressing Tasmania's distinctive cool-climate character.
